| Put either a 500gm or 800gm Vacherin cheese
with the lid on, into a 180°C oven for about 10 minutes - keeping
an eye on it just in case it starts to char.
Remove from the oven, lift the lid and cut the top with a knife
into an X so you can reveal the inside of the cheese.
Peel back just enough to pour in 1/3rd of a glass of Sancerre
- (Petit Bourgeois is great value de-classified Sancerre) and a
couple of sprigs of Rosemary.
Gently stir together and return the cheese to the oven for 5 minutes.
Remove from the oven, stir again and return to the oven for the
final 5 minutes.
Take the Baked Vacherin Mont D'Or from the oven and sit back and
enjoy this ‘Food of the Gods’ with the rest of the Sancerre!
